Recently, as I often do, I decided to spend quality time with Google today instead of my coursework. I was researching how to make your own baby food, since my friend is also looking into this and it looks like such a neat idea. Well, I somehow stumbled onto pages pertaining to how to camouflage vegetables to convince your toddlers and younger children to eat them. Despite how healthy I try to eat, I always struggle to finish my vegetables and in fact, I have been experiencing some aversions to certain veggies during this pregnancy. So, I decided to investigate how I could disguise vegetables to convince myself to eat more of them. After combining a few different recipes and ideas, I came up with this recipe for veggie pizza rolls. They're pretty quick and tasty, and definitely healthier than the freezer-aisle alternative. There is plenty of room for improvement and tweaking to the recipe, but these were a nice first try. Jordan ate them, so they must be at least partially edible. ;)dough:
1/4 tsp granulated sugar
0.25 oz yeast
1 3/4 cup flour
1/2 tsp salt
3/4 cup boiling water
filling:
1 cup of whatever vegetables you want (I used some frozen variety with zucchini, yellow squash, carrots, cauliflower and broccoli)
1/2 cup marinara
pepper, garlic and oregano to taste
finely shredded mozzarella cheese
Preheat oven to 425. Dissolve the yeast and sugar in water and let sit for 8 minutes. While this mixture is sitting, puree the vegetables, marinara and seasoning (in a blender, food processor, etc) to the consistency of baby food. In a separate bowl, combine the flour and salt. Pour the yeast mixture over the dry mixture and stir with a heavy spoon. Roll out dough on a flour covered surface. Cut out individual pieces from the dough measuring approximately 2" x 3 1/2". Place a spoonful of the vegetable mixture in the center of the rectangle of dough, with a little bit of cheese. Roll the dough around the filling, pinching the sides as you go to keep the mixture inside. Bake for 8-10 minutes or until the rolls are golden brown.
In other news, I tried to go for a jog today with Jordan, but it turns out that my heart rate was way over 140 bpm (the limit for exercise, per my cardiologist)- more like 160-170 - so we decided to go for a brisk walk instead. Afterwards I ended up doing one of the videos I had checked out from the library, but evidently this one wasn't as hilarious to Jordan or he was afraid of how I might react because there was no laughing or filming going on. ;)
